Muesli Bars

Muesli is an extremely popular breakfast and snack food with a wealth of health benefits, including its ability to lower cholesterol, regulate digestion, aid in weight loss, and improve heart health. It also helps increase energy, prevent anemia, and promote proper organ function. Making your muesli into a bar makes it an easy to grab healthy snack. Whilst store brought muesli bars are usually high in sugar, making your own can help eliminate it and boost a healthy snack.

Homemade Muesli Slice

Ingredients.

  • 1 ½ cup Rolled oats
  • ½ cup rice bubbles
  • ½ cup coconut
  • ½ cup coconut oil
  • ¼ cup honey (melted)
  • ½ cup pumpkin seed
  • ½ cup walnuts (chopped)
  • ½ cup choc chips
  • ½ cup cranberries (or other dried fruit).

Method.

  • Pre heat oven to 160 degrees and line a baking tray.
  • Melt coconut oil and honey together and set aside.
  • Mix together other ingredients (all should be uniform in size)
  • Pour over honey mixture and combine using your hands.
  • Press into baking dish and bake for 30 minutes or until edges are brown.
  • At this point you can drizzle dark chocolate over the bars if needed.
  • Cool completely before removing from tray and cutting bars.

Seed bars/slice.

Ingredients.

  • 1/2 cup sunflower seeds
  • ½ cup pumpkin seeds
  • ¼ cup Hemp seeds
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • ¼ cup maple syrup
  • ¼ cup honey (melted)
  • Water if needed

Method.

  • Mix altogether using your hands.
  • Press into a baking dish
  • Set in the fridge for at least 2 hours before cutting.
